World stage with ROEST
Old ways won’t open new doors. Open-minded approach is what brought Wojtek to the world barista championship last year. He decided on a rare coffee variety and roasted it on a ROEST sample roaster. He won the German barista championship and succeeded on the world stage in Boston.
We got excited when Wojtek Bialczak contacted us last year seeking our support for the barista championship. We were even more excited when he took the 5th place in the finals round of World Barista Championship 2019.
Wojtek is the head roaster of Five Elephant roastery in Berlin. Today our sample roaster serves him not only to check the quality of roasted coffee but also, he is using ROEST for production roasting of special varieties as well. Lately he is again preparing himself for barista championship. We asked Wojtek to sum up how ROEST is helping him and how it could help you with your competition:
No limits
As Wojtek explained: “With ROEST you have the freedom to direct your coffee where you need it.” When creating the profiles, ROEST allows you to manually adjust many variables: temperature, power, airflow, and speed of the drum.
ZERO WASTE
Coffees that baristas use for their routines are usually of a higher price or lower quantity. Therefore, it’s important not to waste a single bean. For the competitors, size of the batch matters! With ROEST you can roast from 50 to 120g.
Consistency
The great value of ROEST is also the consistency it provides. Coffee served on the stage is judged by experienced professionals. Every small detail in the cup catches their attention. There is no room for deviation between what you wanted in the cup, and what’s in it. Every minor adjustment to the roast is visible and that’s actually very helpful when fine-tuning the profile.
Take it with you
The biggest fear competitors have is not the stage itself. Flying with the roasted coffee to the destination of the championship cracks one nerves. Will my roasted coffee survive the travel? World stage profile
The special variety Wojtek presented last year is called Coffea Eugenioides. It is from Colombian farm Las Nubes. With the profile he created for this lot he was aiming to bring out the powerful sweetness and heavy tactile. It is great for espresso roasts. You can try it yourself.
