When Ayae Maki Fredheim founded Hibi Kaffe in November 2024, she set out to create a roastery dedicated to “quality coffee for everyday moments.” Inspired by her Japanese roots (“Hibi” means “daily” in Japanese), Ayae’s vision was to provide exceptional coffee that enhances simple daily rituals. Managing all aspects of her business meant she needed solutions that would simplify her workflow–and the ROEST P3000 proved to be just that.

From barista to roastery owner
Ayae’s passion for coffee grew after moving from Canada to Norway in 2013. She began working as a barista in Oslo in 2014, transitioning to roasting in 2018. By 2019, she had become the head roaster at her previous workplace, a role she maintained until 2023. After her son was born, Ayae decided to pursue her long-time dream of opening her own roastery, which is the Hibi Kaffe we know today.

Finding the right roasting solution
Starting a roastery solo meant that Ayae needed a production roaster that could deliver exceptional quality while also streamlining her workflow. Additionally, it had to accommodate her limited roasting space and address ventilation challenges. The ROEST P3000 emerged as the ideal solution. Ayae’s initial experience with the P3000 was remarkably smooth. The ROEST team provided excellent support throughout the setup process, ensuring that the machine seamlessly integrated into her daily operations. With the P3000’s intuitive interface and automation features, Ayae quickly adapted to using it in her production workflow.

Improved efficiency and consistency
The ROEST P3000's automated profile control has been a standout feature for Hibi Kaffe. “Once I set up the roast profile the machine automatically follows the curve, ensuring consistent results batch after batch,” Ayae noted. Achieving such consistency manually can be challenging, but with the P3000’s precision, Ayae can confidently focus on other essential tasks, such as packing orders, whilst the machine handles the roasting process.

Managing her roasting solo requires exceptional time management, and the P3000 automation has significantly improved her efficiency. “It allows me to juggle multiple responsibilities without compromising quality,” she added. 

Simplified cleaning and maintenance
Keeping equipment clean is vital for maintaining roast quality. Aya praised the P3000 for simplifying this process. "I used to spend over half an hour cleaning my previous machine after every roast," she recalled. "With the P3000, cleaning is faster and easier—no more crawling into the machine to vacuum out the chaff." This not only saves time but also reduces physical strain after long roasting sessions. So far, maintenance has been hassle-free, and Ayae is optimistic about the machine’s long-term performance.

Looking ahead
As Hibi Kaffe continues to grow, the ROEST P3000 plays a crucial role in ensuring Ayae can deliver high-quality coffee while efficiently managing her roastery solo. “The P3000 has transformed my workflow and allowed me to focus on what matters most: sharing amazing coffee with my community,” she concluded.
